Marc-Etienne Hoffmann, food and beverage manager at Mizner Country Club, teaches the online course Wine Service 101, which not only imparts basic knowledge and service details, but also creates experiences.
Delray Beach, FL (Merxwire) – Marc-Etienne Hoffmann is the Food & Beverage Manager and Sommelier of Mizner Country Club, and has extensive catering knowledge and work experience. According to the Club Management Association of America’s (CMAA) internship program, he imparted experience to FSU students “wine service is nothing but a way to channel your passion.”
CMAA’s online course, Wine Service 101 has started teaching on Monday, June 29, 2020. The course teaches the basic knowledge of different wines, food pairing, and how to demonstrate and serve. Hoffmann stated that one of his main gains was the establishment of the concept “Nobody is taking this class to get into the business of order taking. We are in the business of creating an experience.”
Usually, the CMAA places students in country clubs as summer interns to gather needed credits to graduate. Given the present COVID-19 situation, CMAA decided to offer students online classes instead.
Among the topics covered during the 60-minute on-line class were:
1. Sparkling wine basics – categories, storing, presentation & service
2. White wine basics – categories, storing, presentation & service
3. Red basics — categories, storing, presentation & service
4. Food pairing basics
5. Decanting basics
6.Digestive basics — sherry/port/
“I was very excited to have the opportunity to provide the tools for future leaders to gather together and take their first steps in becoming part of this exciting industry. When it comes to wine, I have two golden rules: First, like what you drink, and second share it with others whether it is as a sommelier, bartender, teacher, chef, or chemist. Know your product and all its ingredients to create the perfect experience,”
Noting his own career experience, Hoffmann said, “I consider myself very fortunate that I had the opportunity to have worked and to work with great leaders who taught me so much. Learning new things is one of the great gifts in life that never stops. I am always looking forward to sharing what I’ve learned with others.”
